Recipe Ingredients

1/2 cup of cooked chicken breast, cubed or shredded (115 calories)

1 Tablespoon of Light Miracle Whip

2 slices of whole grain bread (140 calories)

1 teaspoon of dried cranberries

Just a Dash Celery Seed

Salt & Pepper as desired

Preparing the Chicken Salad Sandwich

Simply mix all the ingredients together (except the bread of course!) and place between the bread. Bread may be toasted if desired.

The Chicken Salad Sandwich may also be assembled just before eating if you're taking it to work to enjoy during the lunch hour.

Add any of the following ingredients to the chicken salad: chopped or shredded lettuce, chopped onions, chopped tomatoes, chopped mushrooms, chopped fresh cilantro, chopped bell pepper, drained capers, toasted pine nuts OR any favorite chopped nut.
