Recipe Ingredients

1/2 cup of canned black beans, drained (110 calories)

3 corn tortilla shells (120 calories)

1/2 cup of queso dip (found in the chip section - 80 calories)

Salsa (40 calories worth)

Cooking Spray

Salt & Pepper as desired

Preparing the Cheesy Black Bean Tacos

Heat a non-stick pan. Spray both sides of the tortillas with cooking spray and place carefully into the warm pan. Allow to cook to suit personal preference on both sides, then remove.

Next, add the drained black beans to the pan and the queso, then cook until hot and bubbly. Remove from heat. Transfer 1/2 of the bean mixture to each taco shell. Top generously with the salad mixture and sour cream listed in the Day 1 Meal Planner.

Suggestions & Tips for Enhancing the Recipe Flavors

Add any of the following ingredients to the beans as they cook: chili powder, ground cumin, garlic salt OR chopped garlic, chopped onions, cilantro (dried or freshly chopped).
