This low calorie, low fat free diet menu recipe makes 2 servings for about 300 calories each.  And oh my - the portion sizes are very generous.

How to Prepare Our Spaghetti Machete Recipe

Begin by sautéing the fresh mushrooms, the chopped bell peppers and the diced onions in cooking spray.

If you wish you can use extra virgin olive oil rather than the cooking spray but only 1 Tablespoon - which should be more than enough for sautéing the vegetables. This will add 120 calories to the entire recipe.

Next, cook the spaghetti sauce in a deep pot.

Over my many decades of cooking in my humble kitchen I've found that jarred and canned spaghetti sauces hold-up better when cooked and heated on the stove top rather than in the microwave. The microwave will break down the vegetables and the sauce will be more watery.

When I prepare my sauce on the stove top I cook it at least 10 minutes and this produces a thicker sauce as more of the liquid is removed via the cooking process.

To prepare this low calorie, low fat diet recipe you will need:

2 cups of cooked spaghetti (whole grain is healthiest)

2 cups of your favorite spaghetti sauce (up to 150 calories)

1/2 cup of fresh sliced mushrooms, 1/2 cup of fresh chopped bell pepper and 1/2 cup of diced onions sauteed in butter flavored cooking spray and no calorie refrigerated butter spray.


Parmesan Cheese (optional)

Lean Meatballs (optional)

Save time and calories by falling back on a few Italian gems at your local market. Here a just a few suggestions:

Frozen Cheese Tortellini - generally 250 calories or less per serving

Pizza Tips for Dieters

Here are just a few suggestions that might be a help while dieting:

Look for individual pizzas in the frozen food section. You'll be apt to eat less than with a mega sized pizza.
 
The less toppings a pizza has, the fewer the calories.
 
Thin crust pizza contains far less calories than pan pizza.  How many calories depends on the restaurant - so ask for a nutrition menu.
 
Order a side salad and fill up on that before eating pizza.  Lettuce is much better for your diet than grease, cheese and pepperoni.
