Papa's Diet Potato Soup

Ingredients for this low calorie, low fat recipe are:

1 small peeled potato, diced
Salt, Pepper
Cooking Spray
1 ounce of grated Mozzarella cheese (skim)
1 cup of skim milk (80 calories)
1/4 cup of diced onions, any type

In a deep pot, cook onions using cooking spray until translucent.  Add diced peeled potato and enough water just to cover potato. Cook potatoes until tender. Add milk and cheese, salt and pepper.

Ingredients for this low calorie, low fat recipe are:

1 can of Campbell's Tomato Soup
1 can of water

1 cup of cooked cheese tortellini (about 250 calories)
 

Combine ingredients in sauce pan, stirring until smooth and warm. This recipe serves 2 for about 250 calories each.

Strawberry Blossom Soup, a low calorie fruit soup recipe.

Ingredients for this low calorie, low fat recipe are:

3 cups of fresh or frozen strawberries
Splenda

Strawberry or Vanilla Extract


Blend thawed strawberries until smooth.  Add a bit of extract and sweeten to suit personal taste. Serve cold.  Makes a delicious summer treat for anyone watching their waistline.
