Free Diet Menu - Mac Cheese

Standard macaroni and cheese generally contains 450 calories or more per serving. Our Mac Cheese recipe replaces higher-calorie, higher fat yellow cheese with white skimmed mozzarella.  Butter is replaced with no calorie butter spray.

Ingredients for this low calorie, lower fat recipe are:

2 cups of cooked shell Macaroni (allow 200 calories)
Pepper
4 ounces of finely graded mozzarella cheese
1/2 to 1 cup of skimmed milk (Use less milk for thick Mac Cheese & more for thin)
2 Tablespoons of Parkay no calorie butter spray

Prepare cheese sauce in microwavable pan:  Melt cheese, milk, pepper and butter until smooth.  Pour over macaroni.  

Optional: Bake a few minutes in preheated 375 degree oven for classic Mac Cheese taste.

This low calorie, low fat free diet menu recipe contains about 550 calories and serves four generously. Based on using 1/2 cup of skimmed milk.
