Elvis Favorite Food Makeovers

Meals Fit For a King

No doubt, Elvis was - and will always be a superstar.  His beautiful voice, good looks, and passion for southern cooking created the magic that made Elvis, the king.  In celebration of his life, it seems appropriate that we recreate some of his cherished comfort foods so that they can fit into most anyone's diet.

Fried Peanut Butter & Banana Sandwich
 
Ingredients for Fried Peanut Butter & Banana Sandwich:
1 Tablespoon of crunchy or smooth peanut butter (about 95 calories)
2 slices of 55-calorie or less bread - wheat/white
1/2 small banana, mashed with a fork (about 40 calories)
Butter-flavored non-stick cooking spray

Spray bread slices on one side generously with cooking spray and 'pan-fry' until golden brown.  While bread is browning, mix together peanut butter and banana.  Spread onto bread while still warm to form sandwich.

Optional:
Sprinkle sandwich with powdered sugar while bread is still warm.
Add a dash of ground cinnamon to banana/peanut butter mixture.
If more sweetness is desired, add a bit of no calorie sweetener or 1/2 teaspoon of honey.

Baked Apple & Sweet Potato Pudding
 
Ingredients for Baked Apple & Sweet Potato Pudding - Crust
2 whole graham crackers crushed into crumbs + 1 teaspoon of Parkay no calorie butter spray + 1 Tablespoon of Splenda
 
Press into the bottom of a microwave safe bowl.
 
Ingredients for Baked Apple & Sweet Potato Pudding - Filling
1/2 cup of cooked sweet potato slices (tip: pop into microwave for about 5 minutes; allow to cool before removing jacket)
1/2 apple, peeled and sliced
1 Tablespoon of brown sugar
1/2 teaspoon of ground cinnamon + dash of ground allspice and ground cloves
1 teaspoon of real vanilla extract
3 Tablespoons of water
 
Layer raw apple and cooked sweet potato over crust.  Mix together brown sugar, spices, vanilla and water and pour over apple and sweet potato.
 
Ingredients for Baked Apple & Sweet Potato Pudding - Topping
1 teaspoon of uncooked oats
1 teaspoon of brown sugar
1/2 teaspoon of real vanilla extract
 
Sprinkle over filling.  Pop into the microwave for about 5 minutes - or until apples are tender.  Remove and enjoy warm or cold.

Ham Bone Dumplings
 
Ingredients for Ham Bone Dumplings
3 ounces of lean ham, sliced into thin strips (about 60 calories)
About 4-6 cups of water (add more if needed)
5 biscuits (110 calories each)
1/4 cup of flour for rolling out dumplings (about 100 calories)
1 cup of skimmed milk (80 calories)
Salt and Pepper

Boil ham in water which will create the tasty dumpling broth.  Roll out biscuits until they are thin by dusting in flour so they won't stick to the rolling pin.  Stack 'dumplings' then when finished with the rolling, slice into thin strips.  

Remove ham from bubbling broth and carefully add a few dumplings to the water at a time.  Cook until dumplings are tender, then return ham to the pot.  Add milk, salt and pepper.

Calories in Diet Makeover - Ham Bone Dumplings - about 800 calories.  Makes enough for 4 servings for about 200 calories per serving.
Fried Tomato Sandwich
 
Ingredients for Fried Tomato Sandwich
1 tomato (about 26 calories)
1/4 cup of skimmed cottage cheese (about 50 calories)
1/2 teaspoon of chopped chives + dash or two of cracked pepper
1/2 carton of egg substitute + 1 Tablespoon of skimmed milk (about 50 calories)
1/4 cup of finely ground cracker or bread crumbs
Butter flavored non-stick cooking spray
 
Remove peel from tomato if desired.  Slice tomato into 4 thick slices.  Next, mix cottage cheese with chives and peppers, then spread a thin line over two of the tomato slices.  Top with remaining two tomato slices to create a tomato sandwich of sorts.  'Fry' in cooking spray until golden.
Calories in Diet Makeover - Fried Tomato Sandwich contains about 200 calories for entire recipe.
