Diet Meals Fit for a King

No doubt, Elvis was - and will always be a superstar. His beautiful voice, good looks, and passion for southern cooking created the magic that made Elvis, the king.

In celebration of his life, it seems appropriate that we recreate some of his cherished comfort foods so that they can fit into most anyone's diet.

Fried Peanut Butter & Banana Sandwich

Butter-flavored non-stick cooking spray

3 ounces of lean ham, sliced into thin strips (about 60 calories)
About 4-6 cups of water (add more if needed)
5 biscuits (110 calories each)
1/4 cup of flour for rolling out dumplings (about 100 calories)
1 cup of skim milk (80 calories)
Salt and Pepper

Boil ham in water which will create the tasty dumpling broth. Roll out biscuits until they are thin by dusting in flour so they won't stick to the rolling pin. Stack 'dumplings' then when finished with the rolling, slice into thin strips.

Remove ham from bubbling broth and carefully add a few dumplings to the water at a time. Cook until dumplings are tender, then return ham to the pot. Add milk, salt and pepper.
