Free Diet Menu: Broccoli & Cheese Soup

There are a million and one ways to prepare Broccoli and Cheese Soup.

And it's a great way to pair a common food that just about everyone loves (cheese) with a common super food that a lot of people don't care much for. Except we-broccoli cheese soup lovers.

Here is our very easy recipe which requires minimal ingredients and that can be put together in just a few minutes.

Lower Fat Broccoli & Cheese Soup Recipe Ingredients

1 ounce of Velveeta Cheese (80 calories)

1 cup of skim or reduced fat milk

1/4 cup of cooked broccoli, preferably the florets and cut into small pieces

1/2 cup of chopped onion, 1/2 cup of chopped bell pepper & 1/2 cup of chopped celery

broccoli cheese soup recipeBe sure to chop the vegetables very fine. Saute them on the stove top using either cooking spray or just a bit of extra virgin olive oil. If you use oil, be sure to drain off any excess before going to the next step. 

While the vegetables are cooking, place cheese and milk into microwaveable bowl and heat until melted. Stir in broccoli. If you desire a thinner soup, add more milk. For a thicker soup, add less.

Add the vegetables to the soup mix and stir to thoroughly incorporate.

The celery, onion and bell pepper are optional ingredients but will add a high note of flavor to the soup recipe. If possible, use red bell pepper as it's a beautiful color combination with the yellow cheese and the green of the broccoli.


This low calorie, low fat free diet menu recipe entree serves 1 for about 175 calories.

Recipe Tips

Cheese: The reason why we opted for the Velveeta is because it's very soft and is easy to melt, and because of such it requires less cooking time. If you opt to use another cheese in the recipe, use a soft cheese with melting power.

Unfortunately, cheddar isn't in the line up and does not do well under pressure.

Varieties of cheese that melt well include:

American, Gruyere, Monterey Jack, Muenster, Gouda, Fontina, Gorgonzola and Brie. The low fat cheeses tend to be less cooperative when it comes to melting.

Milk: We used skim milk in our recipe for 90 calories per cup. Whole milk contains almost two times the calories but is still a healthy choice. Two percent and one percent also make excellent options.

Broccoli: When at the market, carefully pick your selection. If the green florets appear more white than green, then head to the frozen section as it's likely a fresher choice. Because the stalks are generally tough, we prefer to use the florets for the soup recipe.

Other Cooking Notes: Try adding just a bit of Hormel's Real Bacon Bits to the finished recipe or your favorite croutons for a few more calories.
