Ingredients for this low calorie, low fat recipe:

1/2 cup all-purpose flour
1/4 cup Skim Milk
Dash of Salt (optional)
2 Teaspoons of Sifted Baking Powder
1/2 Teaspoon of Ground Cinnamon (optional)
1 Teaspoon of Vanilla Extract (optional)

1/4 cup of Light, Reduced Fat Margarine
1 Small Egg or you can use Egg Substitute if you prefer
1 Cup of your favorite Raisin Bran Cereal
1/4 cup Splenda
OR you can use real sugar if you wish, but add 200 calories to the recipe total

Mix ingredients until they are all incorporated, but take care not to be too aggressive. Spoon into muffin cups and bake in a preheated 350 degree oven until toothpick can be inserted into center of muffin and comes out clean - about 20 minutes.

Makes six muffins for about 125 calories each.

Cooking Notes: The reason why we recommend sifting the baking powder is because it tends to clump and is resistant about breaking apart when it meets with liquid. If you have ever bitten into a particular food and tasted an ingredient that was extremely bitter as well as hard, you probably bit into a clump of baking powder that refused to dissolve.
