Quick Rum Raisin Pie Recipe

Our Quick Rum-Raisin Pie goes together in less than five minutes and is so delicious! We took advantage of the Time Factor by using delicious Kozy Shack puddings - the regular versions. Take note that Kozy Shack also offers calorie-reduced versions of their puddings. Calories in this recipe are based on their original Rice Pudding.

The Lower Calorie Recipe & Ingredients for Rum-Raisin Pie

One basic pie shell, pre-baked and cooled (graham cracker or flour-based & our shell contained 640 calories total)

One container of Kozy Shack rice pudding (130 calories per serving/6 servings per container)

One small container of thawed whipped topping (light or regular - our calories are based on the 15 calories per serving variety)

One small box of dark or golden raisins (or about 75 raisins) - about 130 calories

One Tablespoon of rum extract

¼ teaspoon of ground nutmeg

Recipe Instructions for Rum Raisin Pie

Simply transfer the rice pudding to a deep bowl. Next, add the raisins, the rum extract and the nutmeg. You can also choose to omit the rum extract and nutmeg and add a dash of light eggnog instead OR opt for a dash of eggnog creamer that is available during the holiday season.

Add about half of the whipped topping to the mixture, then fold in very gently so that the topping doesn't collapse. Next, transfer the rum-raisin mixture to the cooled pie shell, then top with remaining topping.

If you prefer softer raisins, they can be plumped on the stove. Simply cover the raisins with water and bring to a boil, then turn off the heat and allow them to plump. Drain and cool thoroughly before adding to pudding base. Place into the freezer area for about 15 - 30 minutes prior to serving to allow pie to fully set.

This lower calorie recipe for Rum Raisin Pie makes six generous servings and contains about 320 calories per slice or eight regular servings for 240 calories per slice.

To create a taller, fluffier pie, increase the topping to two containers. Mix one with the pudding and filling ingredients, then top the pie with the other container.

Recipe Instructions for Chocolate Silk Pie

Simply transfer the pudding to a deep bowl. Next, add about half of the whipped topping to the pudding, then fold in very gently so that the topping doesn't collapse. Next, transfer the pudding mixture to the cooled pie shell, then top with remaining topping and sprinkle on almonds. Place into the freezer area for about 15 - 30 minutes prior to serving to allow pie to fully set.

This lower calorie recipe for Chocolate Silk Pie makes six generous servings and contains about 325 calories per slice OR eight regular servings for 245 calories per slice.

To create a taller, fluffier pie, increase the topping to two containers. Mix one with the pudding, then top the pie with the other container.

To create a chocolate mint pie, add a teaspoon of peppermint extract to the topping.

Quick Egg Nog Pie Recipe

½ cup of egg nog (200 calories)

Simply transfer the pudding to a deep bowl. Next, add the egg nog. Add about half of the whipped topping to the mixture, then fold in very gently so that the topping doesn't collapse. Next, transfer the egg nog mixture to the cooled pie shell, then top with remaining topping. Place into the freezer area for about 15 -30 minutes prior to serving to allow pie to fully set.
