Oh my, delicious soup all fancied-up. Grab your cornbread muffins and prepare for a low-fat, low calorie stuffin' and tell those unwanted pounds bye-bye. Ingredients for this low calorie soup recipe: 1 small can of canned black beans 1 cup of cooked bow-tie pasta (or your favorite bite-sized pasta) 1 can of diced petite tomatoes (Mexican or Italian variety) 1/2 cup of chopped onions (garlic may also be used) 1 package of taco seasoning (optional - and if used, opt for unseasoned diced petite tomatoes)This low calorie recipe for Black Tie Soup goes together in a flash. Entire recipe contains about 700 calories and makes 3 nice servings or two huge servings. Step 1: Using a deep pan, saute onions using cooking spray or a tab of olive oil. Step 2: Add black beans and diced tomatoes and cook until hot. Add 'optional' seasoning package. Step 3: Add cooked pasta. Tom and I are Pasta Lovers, so I generally keep a sealed container of prepared pasta in our fridge. Preparation is so easy via the microwave. Pour pasta into a deep microwave-proof bowl then add water until it rises just over the pasta. Place into microwave. Ours cooks a perfect pasta in 20 minutes, but of course, all microwaves cook differently. So keep a watch on your pasta the first time out. After the pasta cooks, simply drain, add a Tablespoon of olive oil to coat pasta, then place into fridge after it cools a bit. |
