#1 Free Meal Planner - Zippy Cheese Enchiladas

Zippy Cheese Enchiladas - Grab your sombrero and dancing shoes as we take a trip down ol' Mexico way for these tasty cheese enchiladas.

Our Zippy Cheese Enchiladas use corn tortillas which generally contain about 50 calories. Authentic Mexican recipes generally require the tortilla shells to be fried in oil for a few seconds before they are filled with cheesy goodness. Instead, we save a plethora of calories by using our trust butter-flavored cooking spray rather than oil. The trick is to keep the pan at an even heat - so that it's not too cold (this creates soggy tortillas) or too hot (may scorch the tortilla shell or make it too hard for enchiladas).

Simply heat the pan using medium heat, then add your pre-sprayed corn tortilla. Allow the tortilla to reach a sizzle stage, then immediately flip. The reason that we spray our corn tortilla before they hit the pan is that it's too easy to spray into the heat source, thus causing a back draft of flames, and it's scary when one is the target.

To prepare our Zippy Cheese Enchiladas you will need the following ingredients:

12 corn tortilla shells (about 50 calories each)
1 jar of Tostitos Queso sauce (520 calories - and if you wish, you can use 520 calories worth of your favorite shredded cheese instead)
1 cup of chopped onions OR you can use garlic, leeks and shallots if you prefer those over onions
1/2 pound of sliced mushrooms
1/2 cup of sliced black olives (optional)
Chopped Fresh or Dried Cilantro to suit personal taste (optional)
Cooking Spray (we highly recommend butter flavored cooking spray for this enchilada recipe)
Salsa - your favorite brand.

Begin by preparing corn tortillas as directed above. Next, add the mushrooms, the chopped cilantro and onions to the non-stick pan using cooking spray as needed to prevent sticking. Cook until the onions are tender. Remove mixture from heat. Stir in the black olives.

Fill each corn tortilla with a bit of the mixture, then add one small spoon of the cheese sauce in a thin line over the mixture. Roll enchilada style and place into a small baking pan. When all the corn tortillas have been filled, cover with remaining queso - and be certain to warm queso for easier pouring. Bake in a preheated 350-degree oven until enchiladas are bubbly. Serve with salsa and light sour cream if desired. Also enjoy a salad of mixed greens.

Each enchilada contains about 110 calories.

#2 Free Meal Planner - Southwest Black Bean Salad

One of our favorite WOW WEE recipes! Grab your forks, a large bowl, and the kids. This recipe is sure to please everyone.

Ingredients for this low calorie Southwest/Mexican Style recipe:
1 small can of chili beans OR black beans, drained and rinsed (about 400 calories)
1 bag of mixed greens
1 cup of Light Catalina OR Ranch OR French OR Thousand Island OR your favorite Salad Dressing (we're going to allow 40 calories per Tablespoon)
1/2 cup of grated cheese (use your favorite cheese) (about 250 calories)
1 can of black or green sliced olives, drained (about 140 calories worth)
1 cup of grated carrots (45 calories)
corn chips (allow 1,000 calories)

Simply mix & enjoy! Entire recipe contains about 2,000 calories. This is a delicious, light salad that sets well on the tum-tum on a hot summer's day. To make a meal out of the salad, add a bit of sliced roasted chicken.

#3 Free Meal Planner - Killer Quesadillas

Almost anything between flour tortillas has to be good - from beef to beans. But our quesadilla is packed with more flavor than calories and fat.

Cheese & Black Bean Quesadilla - 2 tortillas no more than 110 calories each (corn or flour).

'Fry' in pan using cooking spray until golden brown. Remove and add 1 slice of mozzarella cheese (50 calories), 1/4 cup of your favorite salsa. 1/4 cup of drained black beans (warmed & fully cooked) and 1 cup of raw spinach to one tortilla.

Quickly place remaining tortilla on top to form quesadilla. Cut into four triangles. Quesadillas contain about 225 calories each.

Dip into 2 Tablespoons of regular sour cream; also enjoy as much salsa as you like with your quesadilla.

Also enjoy 1/2 cup of refried black beans. Whip the black beans, then add the following spices: chili powder, ground cumin, a bit of salsa and cooked onions to them. Sprinkle on 1 Tablespoon of grated cheese - any variety. Our calorie calculation is based on using the cheese.'Fry' in pan using cooking spray until golden brown.
