Easy Cream of Celery Soup Recipe

As an example, my Celery Soup Recipe begins with a half stick of margarine and one cup of finely chopped onion and a colorful mix of bell peppers - also finely chopped.

I add about two cups of very finely chopped celery, black pepper and cook until the vegetables are cooked. I add about 1/3 cup of all purpose flour and coat all of the veggies well. Then I quickly add one and a half cups of whole milk and the same amount of reduced sodium chicken broth and I stir until thick and bubbly.

At times, I will add a bit of dill weed to the recipe.

There is no need to add additional salt because the chicken broth contains a good amount of sodium.

A nice crusty bread tops off the meal.

Soup Tip: Easily remove fat from soups by allowing them to cool. Simply skim fat from the top. You can also remove a good deal of starch from potatoes and pasta using this method.
