One cup of chopped red cabbage contains 28 skinny calories.

One large head contains about 350 calories while one medium contains 260 and one small, about 175 kcals.

A large head is about five and one-half inches in diameter. A medium is slightly smaller at five inches and a small, about four inches in diameter.

Easy, Simple Cabbage Roll Recipe

I am a simple cook so the vast majority of my recipes are also simple and use minimal ingredients. One of my favorites recipes is Cabbage Rolls.

Ingredients

6 cabbage leaves, any color
1/2 pound of extra lean hamburger, raw
1 egg, any size
1 dozen saltine crackers, crushed
black ground pepper
chopped onion and bell pepper, as much or as little as desired, saluted
ketchup
cooked minute rice, optional - about 1/2 to 1 cup
pasta sauce, your favorite

I tenderize the leaves with boiling water - just until they are at a wilted state. If they are overcooked, they will taste mushy after going into the oven. Be very careful during this stage because boiling water poses significant health risks. Get the kids out of the kitchen - and keep focused.

Next, I mix the hamburger meat with the egg, the crackers, onion, bell pepper, ground pepper and at times, I add the rice. My husband is fond of the rice method.

The leaves need to cool a bit so the hands don't get burned when working with them. I mold the meat mixture into an oblong shaped, then wrap it in a cabbage leaf, like I would a burrito, folding the ends and placing it flat into the baking pan in which I've added a layer of pasta sauce.

I top with the ketchup then bake in a 350 degree oven until the meat mixture is completely done. My oven takes about 40 minutes for the meat to fully cook.
