Wild Persimmons
Some interesting facts that may surprise you about persimmons…
The persimmon is a favorite fruit of possums. They are quite bitter, right? Quite sour? Oh yes! Then why is it that possums do not have mouths shaped like jute tobacco bags?
Captain John Smith's reaction to the persimmon was aptly spoken, "If it be not ripe, it will draw a man's mouth awry with much torment."
The secret is.....the native fruit becomes sweet generally after the first autumn frost because that is when the tannin in the fruit slowly dissipates and a mellow, sweet meat is left. The tannin content is why the fruit is so bitter. When ripened, they fall off the tree and onto the ground where they are consumed by wildlife.
At times, the leftover fruit will cling to the tree branches throughout the winter months. When spring arrives, the tree will be covered with dried fruit.
In our area of Texas, there are numerous native persimmon trees. Over the years we have watched these trees and there are so many that the fruit goes to waste. So at times when fall is bountiful, we will gather a small amount and make a batch of persimmon bread.

One small fruit contains about 30 calories. There are other notable nutritional elements inside this small package such as close to 30 milligrams of calcium, almost a gram of protein, and close to 70 milligrams of immunity-boosting Vitamin C.
