Common Names for Lambs Quarters, Culinary Uses

Melde, manure weed, fat-hen, goosefoot, white goosefoot, pigweed and bathua.

The young shoots and leaves are generally steamed and consumed as a side dish. The wild greens are generally used like spinach.

It also has uses for livestock, often as a feed for chickens, turkeys and other poultry.

Lamb's Quarters, High in Oxalic Acid

Consumption of this plant in its raw state is not recommended in large amounts due to the high oxalic acid content.

Oxalic acid may cause harmful reactions when touched or ingested. Side effects include spasm, inflammation, cough, wheezing, laryngitis, a burning sensation, shortness of breath, swelling of the larynx and bronchi, pulmonary edema and pneumonitis.

Other common foods that are high in oxalic acid include spinach, cabbage, broccoli, brussels sprouts, sorrel, parsley, rhubarb, and carambola [starfruit]. Individuals who have experienced kidney stones may be advised by their doctor to avoid these foods.

Lamb's Quarters, Nutritional Values

Good food source for calcium, phosphorus, potassium and Vitamin A. The calcium content of one cup of cooked lambs quarters is almost 500 milligrams!

The potassium content for that one cup serving exceeds 500 mg's. Vitamin A content is 14069 IU.

There is zero cholesterol, just over a gram of total fat, almost six grams of protein, and almost four dietary fat grams.
