Italian Mushrooms, a Versatile Vegetable

These babies can be added to soups, to Italian recipes, to salads, to sandwiches or served on the side, sauteed.

And I want to share one of my favorite recipes using all types of edible mushrooms. And yes, different species do hold different flavors - so I always use my favorites when they are affordable, or I stick to the ones on sale, generally the white button type.

To prepare this delicious mushroom soup, you'll need a small container of sliced or chopped mushrooms, one teaspoon of either fresh or bottled lemon juice, a teaspoon of soy sauce, light or regular sour cream, a teaspoon of dill weed and chicken broth [small container at the market]. Chopped onion, optional.

The soy sauce, lemon juice and dill weed create a mix that I enjoy adding to many of my recipes. When combined, the flavors are outrageously delicious.

Simply cook the mushrooms in the chicken broth with the chopped onion. Add the soy, lemon juice and dill weed. Just before serving, stir in the sour cream - as much or as little as you wish. I add about 1/4 cup to my recipe. So if you plan to add more, do a taste test between additions.

Serve with a loaf of crusty bread, like Italian.

Energy Values, Italian Mushrooms

They are beautiful in both appearance and in caloric content. One Italian mushroom contains a skinny 5 calories and adds lots of flavor as well as texture to recipes.

Fatty Acid Content, Potassium Health Benefits

They are exceptionally low in lipids. Total fat for one cup of sliced mushrooms is only 0.07 grams. They are also void of cholesterol.

As to potassium, these guys are loaded! One specimen contains 90 mg's. A cup of whole Italian mushrooms contains a whopping 390 mg's.

Nutritional Notes

They hold healthy notes of calcium, folate, phosphorus, pantothenic acid and zinc. However, they do not contain Vitamins A, C, E or K and they are very low in B-Vitamins.

Selenium content is fantastic at 5+ mcg's for one mushroom.

As to protein, one mushroom contains 1/2 gram, which is quite impressive for a vegetable.
