If you are a vegetarian you can opt for your favorite type of legume rather than the meat. Black, red and pinto beans all work exceptionally well.
To prepare, start with these ingredients:
1 flour tortilla shell which contains about 80 calories
1/4 cup of lean chopped or cubed chicken breast, or you can use your pick of the chick
light, reduced fat sour cream plus 1 Tablespoon of low fat shredded cheese, your favorite variety
Spices: ground chili powder, ground cumin, fresh chopped cilantro, garlic powder.
Vegetables: any variety of the following in chopped, sliced or shredded form; tomatoes, lettuce, onion.
Add as much or little of the spices to the chicken as it heats in a non-stick pan. If you have a leftover packet of Taco Bell salsa or Verde, you can use this instead of the spices if you wish.
Heat the tortilla shell, spoon on the meat then add a good mix of the fresh vegetables. Add the cheese. If you opt to use the sour cream you can apply it to the meat or on top of the salad mixture.
