How to Prepare Collard Greens

First of all, you must purchase sturdy, fresh specimens. Greens tend to wilt very quickly. If the produce manager is efficient in his job, he will keep them moistened with a spray of water which will assist them in staying fresh longer.

If you see any type of wilting or brownish tones on the greens, then pass them buy. Because markets tend to carry multiple varieties of greens - take a look at the others which are available and see if they are at their peak freshness level - then go with them instead.

Once home, even if you have purchased them in a sealed package that states they have been pre-washed, you should give them another bath. Next, fill a large container with water and plunge the greens inside white you put on another pot filled with water and about a teaspoon of salt.

Add one slice of lean bacon to the pot and as the water begins to grow very hot but not boiling, start to carefully add the greens.

As a note, the bacon will add flavor to the greens for a tiny amount of calories. You can use a couple of slices if you wish - and it can be removed before serving.

Fresh greens take only a few minutes to cook. They will wilt very quickly as the water starts to boil - so be sure to add an ample amount to the pot to ensure several servings.

Put on a pan of cornbread while the greens cook - and you'll have a very tasty meal filled with wonderful comfort foods.
