You won't hear one ounce of thunder when you enjoy yours in a roasted state with the skin removed.

When the fatty skin is removed, one thigh that is about 70 grams (that's a regular size piece), the caloric values equal only 82. Wow - that's a tiny amount, isn't it?

And the news just keeps growing better as total dietary fat decreases to under three grams.

The key is to enjoy this meat protein as close to its natural state as possible which means adding only fire or heat along with your favorite spices including salt and pepper.

If you take it for a dip in oil, batter, marinades or dips - the energy values will only increase. If oil and dips in particular are involved, the fat gram content will be increased negatively. If marinades are involved, then sugar grams will spike along with caloric content.

Using the Meat in Favorite Recipes

The great thing about the dark meat of the chicken is that it holds a much richer flavor than the white. It's an excellent choice when making dumplings. The next time that you plan to make them, try using either the meat from the legs, the thighs - or a mix of both instead of the white meat. Because of the rich flavors, you'll also require less bouillon which holds quite a lot of sodium content.

If you take the time to boil your chicken, more likely than not you won't have need of adding that sodium-rich bouillon.

The dark meat is also excellent in casseroles that have starches as a chief component of the recipe such as potatoes, pasta and rice. Try a mix of the following for a delicious and quick casserole: 1 cup of chopped dark meat, 3 cups of cooked pasta shells, 1 can of your favorite seasoned diced petite tomatoes - such as Italian or Mexican style.

Mix all of the ingredients together and place into a preheated 375 degree oven until bubbly hot. Remove and top with shredded reduced fat cheese and return to the oven until the cheese is melted. Quick - easy, just a few ingredients, delicious - and healthy.
