Craning Your Neck While Dieting

Well, it does feel that way at times, doesn't it? You're looking here, and over there - down in the ditch and up to the sky - searching for foods that will make healthy, low calorie, low fat choices for your weight loss plan.

And unless you're feasting on foods that come to the table in their natural state, then it's mighty hard work for a dieter. Particularly when the former daily eating plan contained fried delicacies, sweet no-nothings and a whole lot of chocolate things.

Some feel that chocolate should have its own food group - and we tend to share that sentiment, but of course - it's just wistful thinking.

Fact is, everything that we eat - whether it is healthy or not counts towards our daily caloric totals. And when we exceed those amounts, we know the results.

Our thighs get larger and it become so difficult to put on that modern day girdle (jeans) when we were already struggling to get into them.

Laying on the bed, looking up at the ceiling fan while bobbing up and down as we desperately attempt to get them past our hips. And when those hips grow wider - why it's a next-to-impossible task.

In addition, other things grow - like our abdomen, fingers and yes, even our necks. Speaking of which.....

Uses for Chicken Neck Meat

Traditionally, this part of the chicken is boiled until it is tender. Then the meat is stripped from the bones and used to prepare a tasty gravy - using the meat as well as the water than the meat was boiled in.

Another method is placing the raw meat in a pan with other portions of the bird and roasting it in the oven along with savory vegetables such as garlic, onion, leeks, shallots and chives. At times, carrots and celery are also added.

The meat drippings that are produced in the oven make the richest of broths that can be used in soups and stews - as well as other tasty recipes.

Due to the amount of tiny bones located in the neck of the chicken, it's wise not to share it with Fido.
