Little Meat Located on This Part of the Bird

When it comes to the back of the chicken, there just isn't a lot of meat to speak of. But what does exist contains about 617 calories per one-half pound. And it would take a considerable amount of backs to equal this 1/2 pound weight.

In addition, as is the case with almost all animal protein sources, there are no carbohydrates or fiber grams contained therein.

The potassium benefits are very minimal, sodium content is also slight while cholesterol content is significant.

There are traces of B-vitamins, A-vitamins, riboflavin, and folate contained in one serving. In addition, the serving contains a dose of iron, zinc, Vitamin C and magnesium.

Grandma's Pick of the Chick

Generally, the pick of the chick is the breast, the wing drumette that holds white meat or the pulley bone. You don't see the pulley bone sold at restaurants - or for that matter, on the kitchen table when this food is served.

My mother used to always cut the bird so that there was one and generally, my brother and myself each got half.

It contained a wishbone - and it was so much fun pulling it apart, seeing whose wish would come true.

In homes where large families resided, the cook would cut the bird into as many pieces as possible before serving. There would most commonly be two each of the following parts: breasts, thighs, legs and wings. Then there was the golden pulley bone and the dreaded back. That equaled 10 pieces in total.

My mom used to tell me about her large family and how food was very minimal. They lived during the time of the Great Depression.

She remembered her mother - my grandmother, always reaching for the back, leaving the rest of the bird for her family members.

To me, that story was always quite touching and helps me remember that no matter how threadbare that times currently are, they can always be much worse.
