The Eyes Have It - Health Wise, That Is!

Did you know that during one of the world wars that American pilots were fed a plethora of carrots in order to improve night vision? The downsides of course included:

The amount of Vitamin A found in this super food can be harmful to one's state of health, presenting toxicity issues when daily values are in excess.

The beta carotene content can turn the skin pigment an orange hue when consumed in excess.

And finally, all those carrots just didn't do much to improve night vision.

Raw or Cooked, an Outstanding Choice for Dieters

This super food can assist greatly in your weight loss efforts because it's so ridiculous low in caloric values with one large at 30 kcals, one medium at 25 and one small at 20.

They even contain a good dose of calcium benefits at 36 milligrams per shredded cup.

Add a few golden or dark raisins to that shredded cup of orange - or a few dried cranberries along with a spoon or two of light salad dressing and you'll have something to write home about.

Let's not forget about their baby state; I will never forget that moment in life when I learned that the baby versions were simply large carrots trimmed down to size. I had hoped they were grown that way - but alas, not so.
