Root Vegetables: Smart Bunnies Know Nutritional Foods Grow Deep Under the Ground

Oh those crazy rabbits - they certainly know that there is a treasure of vitamins and minerals to be found by digging deep in the farmer's earthy garden.

This super food is particularly rich in beta carotene and Vitamin A which is well-known for its impressive abilities in supporting eye health.

While we can boil, broil, bake, smash, grill, roast or shred these babies into a wonderful concoction that will be perfect for our healthy weight loss plan - they can also produce a wonderful tasting juice. One that is super in nutritional values while remaining minimal in caloric content.

A one cup serving of carrot juice contains less than 100 kcals and guess what else? Protein! Who would have thunk it? The serving will provide over two grams. And oh - it's super-rich in potassium content at almost 700 per cup.

To place this into prospective, let's look at another food that is well known for its potassium benefits - the banana.

One extra large banana that is about nine inches in length contains more calories than the cup of carrot juice at 135 kcals - and less potassium benefits at 544 milligrams. How cool is that?

One cup of mashed bananas contains 806 milligrams of potassium - so we'd need to eat about three-fourths cup in order to receive the same benefits in the carrot juice. But we wouldn't be ingesting 94 kcals - rather more than two times that amount.

Quick Soup Recipe

If you enjoy munching on this orange baby you can easily prepare a delicious soup. While most add chicken broth to the recipe, ours is a sweeter pot. Take one bag of baby carrots and boil them until they are fork tender.

Add them to a blender or food processor with about 1 cup of the carrot juice and an equal amount of reduced fat milk. Also add a Tablespoon of ground cinnamon - or a teaspoon of pumpkin pie spice if you wish.

Sweeten with your favorite no calorie sugar substitute in order to keep caloric values as minimal as possible.

Be sure to cool the carrots before processing then heat the soup thoroughly before enjoying.
