Diet Bites's Taco Salad Recipe for Dieters - A HUGE salad, low in calories.

For this diet wise recipe you will need:

1 cup of cooked, rinsed kidney beans (any variety), black beans, garbanzo beans, or pinto beans - 110 calories

4 cups of shredded lettuce (any variety) -20 calories

1 small tomato, chopped - 25 calories

chopped onion (optional and you control the amount) - 10 calories

cilantro (fresh or dried and again, you control the amount)

1 teaspoon of chili powder (use less if you prefer a milder taco salad)

1/2 cup of nacho cheese sauce (generally found in the chip section; grab the '40 calories per serving' variety) - 80 calories

2 corn shells broken into bite-sized pieces (100 calories)

your favorite salsa

Place lettuce and chopped onion in bottom of serving bowl. On the stove-top, add beans to a small pan with 1/4 cup of your favorite salsa. When warm, add the cilantro and chili powder and cook for an additional minute or two. Remove from heat.

While beans are cooking, heat nacho sauce in microwave, as well as corn shells. Corn shells take only a few seconds, so watch carefully.

Arrange broken shells in a circle surrounding the lettuce. Top center of lettuce with beans. Top beans with cheese sauce. Top cheese sauce with chopped tomato and more of the chopped onion and salsa if desired. Light sour cream also makes a nice addition for 40 more calories per serving.
