And guess what - a lot of dietary fiber grams loaded therein. Such sadness but hey - we also bring tidings of great gladness. There are several other food favorites that are sweet in content.

for example, Chop Suey contains about 4 fiber grams per cup. Know why? Because it is packed with vegetables and all vegetables are great food sources for dietary fiber.

In addition - remember our lonely little enchilada? We can boost that 0.6 gram content significantly by using a low calorie, bean chili in our recipe - or by adding a serving of beans to our meal plate.

Here is an old family recipe for beef and cheese enchiladas that makes use of the chili; I come from a very poor upbringing and we had this meal quite often at our kitchen table. I have modified the ingredients to include healthier alternatives. Recipe Ingredients for Lower Fat Poor Man's Enchiladas

1 medium size can of low fat chili with beans
12 corn tortillas
1 small package of reduced fat Mexican blend shredded cheese
1 cup of chopped onion

You can either steam the tortillas or cook them on the stove top using cooking spray. My family always prepared the tortillas by dunking them into hot oil for a few seconds and removing them when they were still limber - but this adds so many calories to the recipe that may send your daily totals over the brim.

Sauté the onion on the stove top using cooking spray. Fill the steamed corn tortillas with a bit of cheese and onion and roll to form the enchilada. Top with the chili, more chopped cooked onion and finally with a layer of cheese.

Bake in a medium heat oven until the chili is hot and the cheese is bubbly.
