1 medium size can of low fat chili with beans
You can either steam the tortillas or cook them on the stove top using cooking spray. Sauté the onion on the stove top using cooking spray. Fill the steamed corn tortillas with a bit of cheese and onion and roll to form the enchilada. Top with the chili, more chopped cooked onion and finally with a layer of cheese.
Bake in a medium heat oven until the chili is hot and the cheese is bubbly.
