Noodle Casserole Recipe
You can use Ramen Noodles or any quick cooking noodles of your choice to prepare this very easy recipe. We do not recommend adding additional salt if Ramen Noodles are used because even without the seasoning packet they are quite salty on their own.
If you need more salt, then do such but do such in limited amounts as excess sodium in the diet is associated with all manners of unfortunate ills to the human body.
The Recipe Ingredients
1 Packet of Ramen Noodles, any flavor - save the seasoning packet for another recipe
1 Tablespoon of reduced fat margarine OR one that contains about 50-60 kcals per serving
1 cup of cooked meat of your choice; we prefer roasted chicken and yes, Rotisserie works very well in this recipe
1/2 cup of reduced fat shredded cheese
Your choice of any of the following seasonings: curry powder, ground chili powder, cracked black pepper, salsa, Italian seasonings. As you can readily see, there are a dozen ways to Sunday to prepare this recipe - depending upon the direction you wish to take it. At times, we like omitting the shredded cheese and adding the following: 1 teaspoon of dried dill weed, 1 teaspoon of Soy sauce, 1/4 cup of reduced fat sour cream, and a 1/2 teaspoon of lemon juice.

After the noodles have been cooked and drained, add the margarine and stir. Add the roasted chicken along with the desired seasonings and stir again. Top with cheese and heat in a hot oven until melted.
