Ramen Noodles goes well with so many different foods - from proteins to vegetables to dairy to yes, even fruit like tomatoes and avocado - and yes, even hominy.

If you're from the South, hominy is most likely a pantry staple and often served at meal time, particularly alongside of chili. Basically, it's puffed dried corn kernels. It is a part of the popular Mexican soup known as Pasole which contains spices, pork or chicken, cilantro and chilies along with the hominy.

To save calories, look for the hominy which contains 60 kcals per serving - such as the Bush brand. Other varieties can contain more than double this amount of calories per same size serving.

Rather than using the seasonings listed below you can opt for a packet of your favorite taco seasoning mix if desired.

The Recipe Ingredients

1 package of prepared Ramen Noodles, chili flavor with the seasoning packet omitted
Noodle Casserole Recipe1/2 of a medium can of hominy - about 1 cup drained
1 teaspoon of margarine [50 calories]
1/4 cup of fresh or frozen chopped onion, any variety
1/3 cup of fresh chopped cilantro
1 Tablespoon of ground chili powder
1 teaspoon of ground cumin
1 teaspoon of fresh dried paprika
1/3 cup of your favorite salsa
1/4 cup of sour cream
1 cup of bite-sized cook roasted chicken
1/2 cup of shredded cheese - your favorite; reduced fat, even better!

Cook the cilantro and onion in a pan using the margarine to prevent sticking. This will also add flavor to the vegetables. When the onion is tender, add the chicken and stir.

Next, add the sour cream and stir again. Add the paprika, cumin, chili powder and salsa and stir to incorporate. Add the drained hominy and the cooked noodles and bring to a boil. Reduce the heat and top with the shredded cheese.
