Mexican Style Ramen Noodle Recipe

We're taking our Ramen Noodles to an entire new layer of flavors in this Mexican style casserole recipe. Take note that if you wish, you can omit the suggested seasonings and opt for a packet of your favorite Taco or Fajita seasonings instead. Use at least 1/2 of the packet or the entire packet for a bold Southwest flavor.

The Recipe Ingredients

1 Packet of Ramen Noodles, Chili Style or your favorite flavor; omit seasoning packet
1 cup of lean chicken or beef strips
1/2 cup of shredded Mexican style cheese, reduced fat - even better
Noodles1/3 to 1/2 cup of Mexican salsa
1 Tablespoon of ground chili powder
1 teaspoon of ground cumin [optional]
1/2 cup of fresh chopped cilantro, or you can opt for dried [optional]
1/3 cup of chopped onion
Pickled jalapeno peppers, optional

Preparation Notes, Nutrition

Prepare the Ramen Noodles as directed on the packet, setting aside the seasoning packet which can be used in another recipe if you wish.

In another pan, cook the chicken or beef along with the onion and cilantro using cooking spray or just a small amount of vegetable or peanut oil. Drain of any excess liquids and add the seasonings to the meat, turning to coat. Quickly add the Mexican salsa and stir.

Add the cooked noodles and stir to incorporate. Top with the shredded cheese and serve when melted.

As to the jalapeno peppers, they can be served on the side or incorporated into the dish when the noodles are added.
