This recipe hits the spot on cold brisk days and only costs pennies to prepare. We recommend that the vegetables be cut into bite-sized bits as they will not only cook quicker, they will also be easier to eat.

The Recipe Ingredients

1 packet of Ramen Noodle Chicken Flavor Soup
1 cup of carrots, cut into thin slices
1/2 cup of English Peas, frozen or fresh works well and canned doesn't
1/2 cup of sliced mushrooms, any variety
1/3 cup of chopped onion
1/3 cup of chopped celery
1 cup of prepared lean roasted chicken - or you can use raw if you wish
1 Tablespoon of extra virgin olive oil

Place the olive oil in the bottom of a medium sized soup pot. When heated, add the onion, carrots, celery, mushrooms, cooked or raw chicken, and the thawed [or fresh] English peas. Turn as they cook; adding the vegetables to a minimal amount of oil will assist in bringing out the delicious oils of the vegetables to make a delicious rich broth.

Add about 6 cups of water to the pot and add the seasoning packet that accompanied the Ramen Noodles. When the vegetables have cooked to a tender stage, add the noodles and cook for an additional 2-3 minutes or until the noodles are tender.
