Let's bring the flavors and textures of the Old West to our table tonight. Serve this recipe with a side of golden cornbread and a serving of reduced fat milk. Enjoy a serving of fresh sliced fruit topped with light whipped cream for dessert. The whipped cream contains only 15 calories per serving and adds tons of flavor to fresh fruit for a pitifully-low amount of calories.

The Recipe Ingredients for Western Style Ramen Noodles

1 package of Ramen Noodles, beef flavor prepared as directed on the package with the seasonings omitted
1 cup of lean beef cut into thin strips
1/2 cup of drained pinto beans, or you can use red beans or any of your favorites
1/2 cup of shredded mozzarella or pepper jack cheese, reduced fat variety
1/4 cup of your favorite Mexican salsa or picante sauce
1 Tablespoon of Margarine
1 teaspoon of drained pickled jalapeno peppers if desired

Preparation Notes, Nutrition

Prepare the noodles as directed on the package, but take note that you won't have need of the seasoning package for this recipe. After the noodles are done, drain off any liquid and add the margarine. Stir to incorporate. This will keep the noodles from sticking together.

NoodlesIn another pan, cook the beef using cooking spray if necessary to prevent sticking. Add the picante sauce or salsa after the beef is fully cooked.

Stir, then add the beans and jalapeno peppers. Incorporate the noodles into the beef mixture and transfer to a casserole dish. Top with the shredded cheese.

Place into a 350 degree oven and cook until the ingredients are hot and the cheese is fully melted.
