Vegetable Herb Ramen Noodle Casserole Recipe

The key to this savory recipe is to shred the vegetables or slice them very thin so that they cook quickly. You can leave them in bite-sized bits if you wish but longer cooking time will be required.

If you wish, you can add chunks of cooked lean chicken or other lean proteins to this recipe in place of the beans. You can also top this dish with reduced fat shredded cheese if desired.

The Recipe Ingredients

1 package of Ramen Noodles
1/2 cup of shredded carrots
1/2 cup of button mushrooms, sliced very thin
1/2 cup of drained black beans - or your favorite beans
1 Tablespoon of margarine
Ground black pepper

Preparation Notes, Nutrition

Add the seasoning package to 2 cups of boiling water along with the carrots and mushrooms. When they are tender, add the noodles. They should cook very quickly - about 2 to 3 minutes. Drain off any excess liquid. Add the drained beans and stir, then add the margarine and again, stir to incorporate. Add as much or as little pepper as you wish.
