Economical Zucchini Bread, An Easy Recipe
So easy to prepare and the zucchini adds a burst of health to your bread recipe. It's great being able to enjoy foods that you can feel good about serving to yourself as well as to your family.
How to Prepare Zucchini Bread Recipe
Grate zucchini squash and set aside. In a medium sized bowl mix the dry ingredients listed below - omitting the walnuts.
In a separate bowl, mix the wet ingredients. Combine the two until smooth, then stir in the zucchini and walnuts.
Bake in either a tube pan or a bundt pan or 2 loaf pans in a preheated 325 degree oven.
Cooking time will vary depending upon the oven. Check after 40 minutes. When toothpick is inserted and comes out clean - cake is done OR when cake is golden brown and springs back when touched.
Ingredients for our Quick & Easy Zucchini Bread Recipe
2 cups of finely grated zucchini squash
3/4 teaspoon of salt + 1 teaspoon of baking soda + 1 teaspoon of baking powder
2 Tablespoons of Ground Cinnamon + a Dash of Ground Nutmeg
2 cups of white table sugar
1 Tablespoon of vanilla extract
3 raw eggs
1/2 cup of chopped walnuts
3/4 cup of vegetable oil
