Try to remember the last time that you enjoyed a gourmet chicken salad at your favorite restaurant. Most contain a mix of the following:

- spring greens, baby spinach or lettuce

- chopped, sliced or cherry tomatoes

- nuts; generally chopped walnuts or slivered almonds

- fresh fruit; generally seeded grapes, chopped apple or orange wedges

- dried fruit; generally golden raisins, dried apricots or cranberries

- assorted veggies; generally sliced mushrooms, sliced cucumbers, onion slices, broccoli trees

- protein; examples include garbanzo beans, kidney beans, fried chicken strips, grilled chicken, boiled eggs

- fancy selections such as avocado, sunflower or pumpkin seeds and fresh grated spices & citron such as ginger or lemon

The one thing that sets gourmet restaurant salads apart from salads prepared at home is the dressing. If you prefer a certain store-purchased dressing, then you're set! Simply combine your favorite ingredients to create your ideal gourmet salad. If you wish to have 'fried chicken' in your salad, opt for the prepared chicken in the frozen section.

Now for a solution for our salad dressing if you're among those who prefer restaurant versions. Problem solved! Simply stop by your favorite restaurant and purchase the dressing. Most dressings that are not low cal tend to vary greatly in calories and can run as low as 60 calories per serving on up to over 300 calories per serving. A serving size is 1/4 cup or 2 Tablespoons. The creamier the dressing, odds are - the higher the calorie content. Most restaurants can provide the calorie countdown, so always ask when in doubt.

Chicken strips vary in calories, so but sure to check the label. After preparing in the microwave, you can put the chicken on the stove top and create a crunchy crust by using a bit of cooking spray in a non-stick pan.
