Cheesy Chicken - Our recipe for Cheesy Chicken creates a gourmet-type meal in a flash!

When dieting or not, it's a great idea to keep a bag of skinless chicken breast in the freezer. They are wonderful when it comes to preparing quick, tasty meals - from homemade chicken soup to our Cheesy Chicken recipe.

Cheesy Chicken- a lower calorie recipe for weight loss.

One large chicken breast makes two ample servings. The following is a recipe for two and you will need the following ingredients:

1 large skinless, thawed chicken breast with the visible fat removed - cut into two pieces

1 cup of sliced mushrooms

1/2 cup of diced onion

4 Tablespoons of shredded cheese

Cooking spray

Salt & Pepper to suit personal taste

Cook chicken in a non-stick pan using cooking spray until golden on both sides. Remove and top with sauteed mushrooms and onions. Top each with shredded cheese and serve piping hot.

Enjoy 1 serving of Cheesy Chicken, 1 cup of green beans, 1/2 cup of rice (serve beneath the Cheesy Chicken if desired) and 1 slice of whole grain bread.
