You're going to love our Cheesy Chalupa recipe because it's ultra low in calories, very filling and will keep you filling full for a long period of time. Furthermore, our low calorie recipe contains only a few ingredients: - chalupa or tostada shells (these are the flat, prepared corn shells found in the Mexican food section at your local market) - 1 small can of refried beans (or use your favorite drained beans - whipping or blending them before use) - traditional salad mix (shredded lettuce, chopped onions, chopped tomato) - Tostitos Queso in a jar found in the chip section at your local market OR use your favorite 50-calorie per slice cheese>

The chalupa shells generally contain about 50 calories each while refried beans contain about 110 calories per 1/2 cup serving. As you can see, we have a very low calorie base to work with which means we can enjoy more food, for less calories while losing weight. Other ingredients that can be added to our low calorie recipe to take it up a notch in flavor without adding significant calories include: The Salad: Chopped cilantro & sliced black or green olives. You can also add a bit of avocado, but do take care as they are high in calories BUT they are also high in nutritional values and are considered a healthy fat source. One Florida avocado contains 365 calories, 6.78 grams of protein, 17 grams of fiber, 30 mg of calcium, 52.9 mg of Vitamin C, and almost 6 grams of saturated fat (16.76 grams of monounsaturated fat & 5.09 grams of polyunsaturated fat).
The Beans: Chili powder, garlic powder & ground cumin OR you can use part of a package of Taco Seasoning. Prepare salad and place into fridge to keep cool. Heat shells, beans, and Queso as you normally would on the stove top, in the oven or microwave. Spread 1/4 cup of beans on shell. Top with 1 serving of the Queso and a generous amount of salad. Add your salsa to the top of your chalupas OR tuck it beneath as you wish. Enjoy 3 Cheesy Chalupas topped heavily with the salad mixture.
