Puff Pastry Diet Treasures & Cup of Soup

Ingredients:
 
Puff Pastry Sheets
1 cup of chicken
Spinach
Mushrooms (any variety)
Mozzarella Cheese
Onions (any variety)
Cooking Spray
Soup

Puff pastry is marvelous - absolutely marvelous supporting the capability to make one appear as an award-winning chef rather than a domesticated Kitchen-Witch.

Although a bit pricey in calories and fat, puff pasty is filling and quells the appetite a long while after mealtime.

Use puff pastry sheets for creating Puff Pastry Diet Treasures. One thawed sheet produces about nine servings. This recipes calls for four.

Cut out 4 triangles from the puff pastry and fill with a sauteed mix of the following: 1 cup of boned, skinless chicken (dark or white meat), 2 cups of raw spinach (or 1/2 cup of frozen), 1 cup of sliced mushrooms and 1/2 cup of diced onions. Saute in pan on stove top using cooking spray until chicken is done. Remove and carefully distribute onto the puff pastry squares.

Top with a bit of grated cheese. Next, fold the squares tip-to-tip to form a triangle and place onto a baking pan into a preheated 375° oven until golden brown. An egg wash will produce a beautiful pastry glaze.

Serve these Diet Treasures with your favorite canned soup.
