The most important element of this dish is the wrap. Be sure to purchase only fresh tortillas as the level of freshness will indeed impact the flavor of the burrito.
If you have a fine dining restaurant in your area that is popular for its Mexican food, then pop into the take-out section and order some fresh flour tortillas. If they are made at the restaurant, then you simply can't get anything fresher.
Start by warming them as you would normally - and a steamer works exceptionally well for this purpose.
Prepare the Spanish Rice as directed on the package.
Mix the refried beans with a bit of chili powder for extra diet bling - or use your preferred packet of Mexican style seasoning mix. We used 2 Tablespoons of ground chili powder in our beans as we like them spicy. For a milder version, cut this amount in half.
It's time to warm the beans - and afterwards we'll spread one-fourth of the can onto the edge of one of our warm tortillas.
Now we'll add 1/4 the package of the Spanish Rice on top of our seasoned warm beans.
Finally, we'll add our favorite Mexican style salsa and 1/4 cup of low fat grated cheese.

Now we're ready to roll the shell burrito-style. Finish by 'frying' until golden on the stove top by using cooking spray. However, if you prefer your burrito soft, then you're ready to go to the table and begin eating.
Serve warm with more salsa. Add a salad to the meal plate that consists of finely shredded Iceberg lettuce, chopped tomato, chopped cilantro and onion. Also add a low caloric soda to your meal.
Another meal suggestion is to add low fat chili to a flour tortilla shell. It's very tasty for minimal kcals - and when canned chili is used, the meal goes together very quickly. Return to Diet Menus - Shopping List
