Beef Stroganoff & Spring Salad Diet Recipe

Because of its creamy base, this dish can be extreme in caloric values, particularly when rich cream is used in the recipe.

Rather than opting for fatty cream, we will slash the kcals in our homemade recipe by using low fat sour cream.

Because it is so flavorful, a little sure goes a long way where flavor is concerned, and the sour cream also adds a velvety texture to the recipe.

Recipe Ingredients for Beef Stroganoff

2 beef cutlets - and ensure that they are extra lean and tenderized well; you can opt for chicken if you wish. Cut the meat into bite-sized cubes for this recipe.
3 cups of egg noodles, cooked to desired tenderness
1/2 cup of diced onions and they can be of any variety - purple, white or yellow; if you like bunch onions, the green part can also be included in the recipe if desired.
1/4 cup of diced bell pepper: red, yellow, orange or green in color
1/4 cup of finely diced chopped celery with the strings removed
1 cup of low fat sour cream; fat free can be used but we prefer the flavor of the low rather than the zero version.
1/4 to 1/2 cup of low fat milk, salt, ground paprika, and either white or cracked black pepper  

Start by placing the beef or chicken into a thick non-stick pot or a deep skillet and cook until the bottom forms a golden brown color.

Quickly add onions, celery and bell pepper and then stir to collect the meat residue which formed on the bottom.

This will add tons of flavor to your recipe. Just ensure that the heat doesn't reach a scorched or burnt level. You'll need to keep a close eye on the pot or skillet during this phase. Next, addabout 1/4 cup of water to the mixture.

As to the egg noodles, you can prepare them while the meat is cooking or you can add them to the meat with extra water necessary for cooking.

We prefer to cook ours in the microwave while the meat is cooking. They only take a few minutes to prepare in the microwave and when using this method, we can control the level of doneness. Regular or wide can be used - as well as thick or thin noodles.

Add the noodles to the meat mixture. Salt and pepper if desired. If the noodles are cooked, add 1/4 to 1/2 cup of skim milk and stir to incorporate. Add 1 cup of low fat sour cream. Sprinkle on 1/2 teaspoon of ground paprika if desired.

Serve with a side salad of raw spinach, diced tomatoes and cucumber - and just a splash of salad dressing. Adding a few walnuts and dried cranberries to the salad really livens things up, particularly nutritional value.

Spring Salad Mix:
baby spinach
chopped tomatoes
sliced cucumber
grated reduced fat cheese
light salad dressing

Commercially Prepared Versions, Quick to the Table

Campbell's has a meal kit available which contains 184 calories, 6 impressive protein grams, 4 grams of total fat, and 1 fiber gram. It's high however in salt content at 650 milligrams. Saturated fat is good at 1.5 grams with cholesterol content at 10 milligrams.

They also have a Beef Stroganoff Chunky Soup on the market that contains 235 kcals per cup with 11 total fat grams, so if sodium (1044 mgs) is not a concern in your diet, then this may make a quick fix to satisfy cravings.
