2 beef cutlets - and ensure that they are extra lean and tenderized well; you can opt for chicken if you wish. Cut the meat into bite-sized cubes for this recipe.
3 cups of egg noodles, cooked to desired tenderness
1/2 cup of diced onions and they can be of any variety - purple, white or yellow; if you like bunch onions, the green part can also be included in the recipe if desired.
1/4 cup of diced bell pepper: red, yellow, orange or green in color
1/4 cup of finely diced chopped celery with the strings removed
1 cup of low fat sour cream; fat free can be used but we prefer the flavor of the low rather than the zero version.
1/4 to 1/2 cup of low fat milk, salt, ground paprika, and either white or cracked black pepper
Start by placing the beef or chicken into a thick non-stick pot or a deep skillet and cook until the bottom forms a golden brown color.
Quickly add onions, celery and bell pepper and then stir to collect the meat residue which formed on the bottom.
This will add tons of flavor to your recipe. Just ensure that the heat doesn't reach a scorched or burnt level. You'll need to keep a close eye on the pot or skillet during this phase. Next, addabout 1/4 cup of water to the mixture.
As to the egg noodles, you can prepare them while the meat is cooking or you can add them to the meat with extra water necessary for cooking.
We prefer to cook ours in the microwave while the meat is cooking. They only take a few minutes to prepare in the microwave and when using this method, we can control the level of doneness. Regular or wide can be used - as well as thick or thin noodles.
Add the noodles to the meat mixture. Salt and pepper if desired. If the noodles are cooked, add 1/4 to 1/2 cup of skim milk and stir to incorporate. Add 1 cup of low fat sour cream. Sprinkle on 1/2 teaspoon of ground paprika if desired.
Serve with a side salad of raw spinach, diced tomatoes and cucumber - and just a splash of salad dressing. Adding a few walnuts and dried cranberries to the salad really livens things up, particularly nutritional value.
