Ciabatta Classics & Potato Lattes Diet Recipe

Wal-Mart sells delicious Ciabatta Bread Rolls for about $2.00 for a package of 6 that are truly delicious. Ciabatta bread is unique, the inside filled with pockets of air. When toasted, one almost feels like a full-bloodied Italian.

Begin by slicing bread in half. Spray with cooking spray and toast on top of the stove.

Remove and fill with lean deli meat, cheese, raw spinach (which is easier on the tummy than common lettuce), sliced tomato and a splash of Mayo or mustard.

Peel potatoes, wash, pat dry, then shred with a grater. Be careful!

Spray pan, then add potatoes creating four small piles if you pan is large enough. If not, you'll need to cook the Potato Lattes in batches.

Add salt and pepper if desired and cook until golden brown on one side, then carefully flip to complete the cooking process. Serve with catsup if desired.

Serves 4, About 450 Calories per Serving
