Rustic Cornbread Recipe

Earthy, Rustic & Delicious Cornbread Recipe

These low calories cornbread muffins take about 5 minutes from start to finish and are simple, delicious and very rustic.

They also transport very well in a knapsack when hiking or camping in the wild.

Put a can of beans on the fire - pull a cornbread muffin out of your knapsack, and the combination is an instant 'rustic gourmet' meal.

The Recipe Ingredients

1 cup of yellow cornmeal
1 cup of all-purpose flour (bread flour works exceptionally well)

1 teaspoon of baking powder

1 egg

1/4 cup of vegetable oil

1 cup of milk (we used whole milk in this recipe)

The entire recipe contains about 1,300 calories and makes 12 very nice-sized cornbread muffins (that's only a little over 100 calories for a great big muffin!). Allow bread to completely cool before covering/storing  leftovers.

Preparation Notes for Rustic Cornbread


Mix all the ingredients and spoon into a large muffin pan which has been sprayed with cooking spray (so your darlings won't stick).

Bake at 375 degrees until golden brown.

Adding Layers of Flavor, Texture

If you desire a sweet corn muffin, simply add 1/4 cup of sugar or Splenda. Sugar will add an additional 200 calories to the recipe. If you choose to use skim milk over regular milk, subtract 50 calories from the recipe.

Serving Suggestions

Tom and I enjoy our cornbread muffins crumbled up in our vegetable soup.

At this stage, the Vegetable Soup is instantly transformed into Cornbread Soup.

These cornbread muffins can also be used to create delicious stuffing.

Simply add a bit of chicken broth, ground sage, sauteed celery & onions (both chopped) and dried cranberries. Stir and bake as you would stuffing or dressing.
