One of Our Favorite Soup Recipes

After extensive experimentation with our mushroom soup recipe, we decided that it just doesn't taste the same without the addition of butter.

Keep in mind that this diet soup recipe for mushroom soup makes a very nice pot - about 6 servings at about 160 calories per serving.

Our diet soup recipe for Mushroom Soup is very intense, very flavorful, good enough to qualify as a gourmet entry for any special occasion - and it only takes 1 serving to feel very satisfied.

But for 160 calories per serving, even the dieter can return for a second helping. Our test-tasters gave this recipe 4 out of 4 stars and all went back for seconds.

The Recipe Ingredients For Gourmet Velvety Mushroom Soup

1 pound of your favorite mushrooms, sliced (we used button mushrooms in our recipe)

1 cup of Chopped Onions, any variety

1 teaspoon of dill weed

1 teaspoon of paprika

1/2 cup of fresh parsley (dried works perfectly well, too)

1 Tablespoon of Soy Sauce

1 teaspoon of lemon juice

4 Tablespoons of Butter

2 cups of low sodium chicken broth (or 2 chicken bouillon cubes, dissolved in 2 cups of boiling water)

1 cup of skim milk (or use fat free, 1% or 2% if possible)

3 Tablespoons of all-purpose flour

1 teaspoon of salt (omit if using chicken bouillon or full-blown chicken broth containing salt)

1/2 cup of light sour cream

How to Prepare This Low Calorie Mushroom Soup Recipe

Use a 2 quart, deep pot to prepare soup. Start by melting butter. Next,  add onions and cook until they begin to clarify. Add mushrooms and stir well.

Add dill, paprika, soy sauce and broth. Simmer until bubbly.

While mushroom soup is simmering, prepare the thickener of flour and milk in a bowl. Simply whisk together, then stir into the soup. Simmer for about 15 minutes, taking care to stir the soup occasionally.

Finally, add salt, pepper, lemon juice, and parsley. Stir in sour cream.
