1 pound of your favorite mushrooms, sliced (we used button mushrooms in our recipe)
1 cup of Chopped Onions, any variety
1 teaspoon of dill weed
1 teaspoon of paprika
1/2 cup of fresh parsley (dried works perfectly well, too)
1 Tablespoon of Soy Sauce
1 teaspoon of lemon juice
4 Tablespoons of Butter
2 cups of low sodium chicken broth (or 2 chicken bouillon cubes, dissolved in 2 cups of boiling water)
1 cup of skim milk (or use fat free, 1% or 2% if possible)
3 Tablespoons of all-purpose flour
1 teaspoon of salt (omit if using chicken bouillon or full-blown chicken broth containing salt)
1/2 cup of light sour cream
Use a 2 quart, deep pot to prepare soup. Start by melting butter. Next, add onions and cook until they begin to clarify. Add mushrooms and stir well.
Add dill, paprika, soy sauce and broth. Simmer until bubbly.
While mushroom soup is simmering, prepare the thickener of flour and milk in a bowl. Simply whisk together, then stir into the soup. Simmer for about 15 minutes, taking care to stir the soup occasionally.
Finally, add salt, pepper, lemon juice, and parsley. Stir in sour cream.
