Oh my - a cozy bed of lettuce shredded to perfection topped with concoctions that gourmet chefs are made of....
Ingredients for this low calorie recipe:
1 small can of canned black beans, drained, rinsed, mashed & heated
6 chalupa shells (heated in microwave - 50 calories each)
Jarred Queso sauce, heated (found in the chip section - 40 calories per serving)
1 cup of salsa or picante sauce
1/2 head of lettuce, shredded
This low calorie recipe for Zippy Black Bean Chalupas goes together in a flash.
Entire recipe contains about 1,000 calories. Take things up a notch by adding chili powder, ground cumin and cilantro to the beans. Also add chopped tomatoes, fresh chopped cilantro and chopped onions to the lettuce.
