Easy Pound Cake Recipe

Recently, I was reviewing my grandmother's recipe for pound cake and was astonished as I calculated the calorie and fat content. Although delicious, it contained well over 10,000 calories and served 12 generously.

Needless to say, 10,000 calories divided by 12 servings equals an excess of 800 calories per serving and is equivalent to about four chocolate candy bars.

The good news is that in those olden, golden days, most people worked extremely hard in their daily life, with a farmer burning as much as 6,000 calories per day plowing the fields by hand and crude implement, working from sunrise to sunset.

The bad news is that in the modern world, due to a sedate lifestyle generated by technological advancements our bodies require far fewer calories per day. Even so, our cravings for certain foods - such as delicious pound cake have not diminished.

So without further adieu, let's cut out the unneeded excess fat and calories. Here is grandmother's delicious, yet fully-loaded recipe for pound cake, followed by Diet Bites' much-trimmer, easy pound cake recipe for comparison.

The Ingredient List

Grandmother's Pound Cake Recipe

4 cups of all-purpose flourpound cake recipe
6 large eggs, brought to room temperature
6 cups of table sugar
2 cups of butter, brought to room temperature
2 teaspoons of baking powder
1 cup of buttermilk
1 Tablespoon of vanilla extract
Juice of one lemon + grated peel
pinch of salt

Mix butter and eggs until creamy. Add sugar and stir in buttermilk. Add juice of lemon, peel, vanilla and salt. Combine with well-sifted flour, salt and baking powder.

Bake in a preheated 325 degree oven until golden brown.

Our quick and easy pound cake recipe is indeed eons lower in Calories & Fat than yes....our beloved Grandmother's old-fashioned, yet deliciously wonderful pound cake recipe. We took out most of the fat and reduced the calories greatly, but left in the 'deliciously wonderful'.

 


The entire lower calorie pound cake recipe contains about 2,820 calories and serves 12 generously for 235 calories per slice - a little over 1/4th the calories of Grandma's full-blown pound cake recipe. Take this easy pound cake recipe to another level by adding 1/2 cup of sliced strawberries and a serving of reduced-fat whipped cream for an additional 35 calories. What a Diet Deal!

Quick & Easy Pound Cake Recipe

2 cups of all-purpose flour
6 eggs
1 cup of sugar (you can reduce calories in cake by about 800 calories by opting for Splenda)
1/2 stick of butter (room temperature)
1 Tablespoon of vanilla extract (we opted for imitation vanilla extract)
1 cap full of lemon extract
2 teaspoons of baking powder

cooking spray

Combine butter, eggs and sugar until fluffy. Add extracts. Add baking powder and flour and combine well. Spoon into a loaf pan that has been sprayed with cooking spray.

Bake in a preheated 325 degree oven until golden brown, about 1 hour.
