Black beans topped with fresh chopped sweet white onion and fire-roasted red bell pepper goes wonderfully swell with this reduced calorie, lower sodium recipe for Quick Roast Beef Sandwich.

Diet Bites Recipe for Quick Roast Beef Sandwiches

You will need the following Ingredients to prepare this low calorie recipe:

1 small container of Deli Roast Beef, sliced thin, thoroughly washed to remove excess salt

1 cup of the following mix: chopped onion, chopped bell peppers - and you can use fire-roasted bell pepper if you wish - and you can also opt to use several different colors of bell pepper.

4 slices of Mozzarella cheese, skim variety

cooking spray

Toast bread of your choice OR sub rolls; I've even used hamburger buns.

How to Prepare Our Quick Roast Beef Sandwiches


These pull together very quickly - so if you don't have a lot of time for preparing a meal, this recipe may become your golden child.

Step 1

Cook the onion and bell pepper in a pan using cooking spray until the onion is translucent. While the vegetable mix is cooking wash the lean thin slices of the roast beef. This will not greatly impact the flavor - and the purpose is to remove excess salt in the meat. Keep in mind that the more salt we consume, the more we crave - and excess salt supports poor health.

Step 2

Add the roast beef slices to the pan. They will cook very quickly so you must work fast. Top the warm slices with the onion and bell pepper mixture.

Step 3

Add the slices of Mozzarella cheese to the top of the vegetable mix and transfer to your choice of bread.

Special Preparation Notes

You can prepare a bit of Au Jus sauce to dip the roast beef sandwich into - but it does contain quite a bit of sodium content and will pretty-much negate washing the salt from the beef.

I like to toast my bread for a crunchy bite. To save calories I use butter flavored cooking spray rather than margarine or butter as a spread. I pop it into the toaster oven and in just a few minutes - it's golden and absolutely perfect.
