If you've been dieting for quite some time and are longing for a substantial meal, then our recipe for Mac & Cheese with Chickpeas might just fit the bill.

This is a very easy recipe when prepared macaroni and cheese is used. As to the peas, its other common name is garbanzo beans.

Both of these ingredients are light in color but when combined, they create a unique, delicious flavor.

While the mac ingredient contains a bit of fat, it's minimal when used in moderation.

It also has another plus because the fat in the dish can assist in quelling hunger and in making the body feel satisfied.

This is truly a delicious comfort food.

The Recipe, Ingredient List for Mac & Cheese With Chickpeas

Ingredients Required for Preparation

1 container of Bob EvansŪ Macaroni & Cheese, made with real cheddar cheese [serves 2]
1 can of Bush's chickpeas
1/3 cup of the following vegetables, sauteed and chopped: celery, bell pepper, onion [optional ingredients]
1/2 cup of sliced mushrooms, sauteed - also optional
5 Hillshire Farms Tiny Little Smokie Sausages sliced into rounds and cooked with the vegetables - optional

As we can see, there are only two required ingredients for this recipe - the macaroni and the garbanzo beans. The other ingredients will simply take the dish to another layer of flavor.

To prepare, simply heat the macaroni as directed on the package.

As to the beans, we like to roast ours on the stove top using either non-stick cooking spray [butter flavor] or a teaspoon of olive oil. We cook them in a non-stick pan for about 5 to 10 minutes.

Add these to the macaroni.

If you use the vegetables, cook them with the cocktail sausages and combine all of the ingredients.

The Caloric Values, Serving Sizes

This recipe makes enough for four servings. The entire Bob Evans package contains 660 kcals; the beans contain about 300 kcals which equals about 240 kcals per serving.

The vegetables will add minimal caloric values. The sausages contain only 160 calories for five.
