Southwest Black Bean Salad, a Low Calorie Recipe for Dieters

One of our favorite WOW WEE recipes! Grab your forks, a large bowl, and the kids. This recipe is sure to please everyone.

Ingredients for this low calorie recipe:

1 small can of black beans, drained and rinsed (about 400 calories)
1 bag of mixed greens
1 cup of Light Catalina OR Ranch OR French OR Thousand Island OR your favorite Salad Dressing (we're going to allow 40 calories per Tablespoon)
1/2 cup of grated cheese (use your favorite cheese) (about 250 calories)
1 can of black or green sliced olives, drained (about 140 calories worth)
1 cup of grated carrots (45 calories)
corn chips (allow 1,000 calories)

Simply mix & enjoy! Entire recipe contains about 2,000 calories.

This is a delicious, light salad that sets well on the tum-tum on a hot summer's day. To make a meal out of the salad, add a bit of sliced roasted chicken.

Black Bean Queso & Chips, a Lower Calorie Recipe

Lovely black beans, beautiful yellow queso. Such complimenting colors that coordinate well with complimenting flavors. Rich, bold, tasty and yes, low in calories. A dieter's delight for certain.

It's a given that cheese and dieting find difficulty in creating Weight Loss Harmony. But this isn't to say that Weight Loss Harmony is an impossibility!

Check out the jarred queso sauce in the chip section next time you visit the market. For 40 calories per serving, that's a lot of flavor!

 


Ingredients for this low calorie recipe:

1 small can of black beans, drained and rinsed (about 400 calories)
1 jar of queso

Simply combine and heat. Serve with light chips or use to top a baked potato. How easy is that?

Black Beans & Cornbread Muffins, a Low Calorie Recipe

Another comfort food favorite. Our take utilizes the tasty black bean, as well as a few traditional spices that you probably have waiting for you in your humble pantry at this very moment.

Ingredients for this low calorie recipe:

1 small can of black beans (about 400 calories)
1 - 3 Tablespoons of chili powder
1 teaspoon of ground cumin (optional)
1/2 teaspoon of dried cilantro (optional)

Combine black beans and spices and heat. Top with a slice of 50-60 calorie cheese if desired. Enjoy with the following cornbread muffin recipe. If you enjoy a sweet corn muffin, add a bit of Splenda to the recipe:

Ingredients for this low calorie recipe:

1 cup of yellow corn meal
1 cup of white all-purpose flour
1 cup of skim milk
1 Tablespoon of baking powder
1 large egg
1/2 teaspoon of salt
1/4 cup of vegetable oil

Spray muffin pan and heat in oven. Remove and fill with batter. Bake in a preheated oven at 375 degrees for about 20 minutes, or until muffins are done. Makes 12 large cornbread muffins or 24 mini-cornbread muffins. Large muffins contain about 100 calories each; mini's contain about 50 calories each.
