Black Bean Enchilada Ingredients

You will need the following Ingredients to prepare this low calorie recipe:

1 small can of  canned black beans, drained, rinsed & mashed

1/2 cup of salsa or picante sauce

6 corn shells (50 calories each)

1 small jar of queso sauce (found in the chip section - 40 calories per 1/4 cup serving)

Cooking Spray (butter flavor will add more flavor)

1/2 cup of chopped onions

How to Prepare Our Black Bean Enchilada Recipe

This low calorie recipe for enchiladas goes together in a flash. Each enchilada contains about 175 calories.

Step 1: Cook tortillas in a non-stick pan using the cooking spray. Be careful not to spray into open flame; it's best to remove pan to spray when more is needed.

Corn shells will cook quickly. Simply heat on one side, carefully turn and heat on the other. If preferred, shells may be heated in microwave between two damp paper towels.

Step 2: After corn shells are done, add chopped onions to the pan, using more cooking spray if necessary.

Step 3: Add salsa to beans and mix with a spoon. Remove onions which should be in a clarified state at this point.

Step 4: Lay  tortillas out flat and spread each with the black beans. Top all evenly with the chopped onions.

Step 5: Reserve 1/2 the queso sauce for the top of the enchiladas. Spread remaining 1/2 evenly onto the black bean mixture. Roll enchilada-style and place into a small cooking dish. Top with remaining queso.

Serving Suggestions

Serve with a lettuce and tomato salad if desired. Enchiladas go well with sour cream but be sure to calculate additional calories.

To take this low calorie enchilada recipe up a notch, experiment with spices. Try adding chili powder, ground cumin, garlic powder, and cilantro to the beans before filling the shells.
