Low Calorie Cheese Enchiladas

I'll have to admit, cheese enchiladas are one of my favorite foods on the planet.
Yes, they can be filled with more fat than lean - and yes, if we consume too many we'll store the excess calories in the body's fat cells - and yes, too much cholesterol consumption due to cheese overload can contribute to future cholesterol build-up within our arteries - BUT, I still love to eat them.
And what's life without a cheese enchilada every now and then, right?
And keep in mind, that's always what a healthy daily diet is all about - enjoying the foods that we like in moderation.
The healthiest daily diet on the planet allows for minimal fat and for foods that we like - in moderate amounts.
While we can't enjoy a dozen enchiladas, we can enjoy 2-3. We can always enjoy them again on another day, right? Right!
Less than 100 calories per enchilada
8 corn tortillas (40 calories each)
1 can of El Paso Green Chili Enchilada Sauce (about 100 calories) (red sauce may also be used)
4 slices of white American cheese (70 calories each)
4 cups of raw baby spinach (25 calories)
1/2 cup of slices fresh button type mushrooms (21 calories)
1/2 cup of sliced onions (30 calories - boiler or pearl onions are easier on the tummy)
Cooking spray, salt, pepper (0 calories)

Cook sliced onions, mushrooms and spinach using cooking spray on the stovetop as tortillas are warming in the microwave between two damp paper towels. Remove and add salt and pepper.
Next, put 1/3 a slice of cheese on the end of each corn tortilla, then a spoon of the spinach-mushroom-onion mixture. Roll into an enchilada.
When you have all eight enchiladas in a microwave proof dish, pour on the sauce. Top with remaining cheese and pop into microwave until done.
Calories - a little less than 100 calories per enchilada.
Serve with a side of Mexican or Spanish rice and diet soda and you've got one hot n kicky fiesta!
