Eggnog on Ice - a Holiday Recipe for Dieters

Sinfully deliciously, many varieties of holiday eggnog can cost a dieter more than 500 calories per cup.

We'll take those calories down a notch with our delicious, lower calorie, lighter Eggnog on Ice. To make this diet friendly holiday eggnog you will need the following:

- 3 eggs slightly beaten
- 2 1/2 cups of skim or low fat milk
- 1Tablespoon of REAL vanilla extract
- 1 Tablespoon of rum extract
- 1/4 cup of sugar
- 1/4 cup of Splenda + 1 Tablespoon of Splenda
- Dash of salt
- 1 container of LIGHT whipped topping (15 calories per serving)
- ground nutmeg (fresh whole nutmeg renders more pungent flavor to nog)

Warm eggs, sugar and salt in non-stick saucepan then slowly add milk. Allow the mixture to cook over low heat for about 15 minutes or until mixture thickens, then remove from heat. Add extracts, Splenda and about 1/4 teaspoon of ground nutmeg. Stir gently then allow to cool. Remove from fridge and gently add whipped topping to eggnog mixture. Top with just a dash of ground nutmeg. Serves 6 for less than 200 calories per serving.
