Bacon & Smoked Meats May Cause Cancer

Health Issues Triggered by Nitrates & Nitrosamines

Many foods contain 'nitrates', an additive which is used to prolong shelf life.  Nitrates have been linked to certain types of cancer and may contribute to esophageal and stomach cancers in countries where nitrate-cured meats are consumed in abundance.

Foods that commonly contain nitrates include bacon, sausages, sandwich meats and smoked meats. Other nitrate-related health issues include:

- Nitrate-rich fertilizers are often used on commercially produced fruits and vegetables, many of which naturally contain nitrates with root vegetables and green vegetables containing higher levels of nitrates.

- Salt intake may present an increased risk for certain types of cancer, including stomach cancer.

- Shallow or private wells may contain high levels of nitrates related to triggering certain types of cancer. When more nitrogen-rich fertilizer is added to the soil than the soil uses, the excess nitrates are absorbed into the ground and thus impact the level of nitrates found in groundwater, including private wells.

- Due to ground seepage of commercial fertilizers, much of the public water supply contains nitrates which may pose a link for bladder and ovarian cancer in women.

- Congenital methemoglobinemia (met-HB) in infants occurs as a result of an enzyme deficiency. However, methemoglobinemia may be acquired as a result of metabolized-nitrites.

- EPA currently allows 10 ppm nitrate-nitrogen limits, specifically to protect infants from Acquired/Toxic Methemoglobinemia.

- Nitrates are easily absorbed by water, although difficult to remove. Nitrates can be removed from water through distillation in which the water is boiled, the steam captured and then converted back to nitrate-free water. Nitrates may also be removed or greatly reduced from water by reverse osmosis (demineralises but does not totally remove nitrates), blending or through iron exchange.
